This was an amazing experience. It doesn’t seem possible that we could choose a menu for lunch, take a tour of a beautiful market, prepare tortillas, two salsas and a six course meal, but we did! Then we got to eat what we made with our newly made friends. We were in Oaxaca 2 months, and this class was definitely a highlight of our trip.
Loved the tamales, lentil soup with plantains, bacon and pineapple, and enchiladas with “mole bueno.” Received an email with the recipes for all the dishes we made and will be making them when we get home.

This was not the experience we were hoping for. The chef was snappy, impatient and rude with a group who were there to learn. Obviously we don’t know what we are doing. That’s why we took a class. Still don’t feel like I learned anything…
Location was lovely. I’m grateful to learn about the market. Support staff was GREAT. But it’s a steep price to be made to feel like an idiot. :/

We had heard good things about the Casa Crespo cooking class, but didn’t know quite what to expect. Our group of friends had the whole class to ourselves. Oscar, the owner, was such a gracious and knowledgeable host, we enjoyed every minute of it. He gave us the history behind all the ingredients and made the class fun and interesting. Despite our mixed level of cooking skills, the meal turned out amazingly well. Combined with copious amounts of beer and mezcal, the afternoon couldn’t have been better. I highly recommend it.

The group was large and I didn’t feel that we really learnt very much about what we were cooking. The trip to market really was about explaining the different types of fruit and veg available. There was no real shopping for produce. I felt uneasy about 15 pairs of hands touching the food which I was about to eat so ate very little. We did though meet some really lovely people which made it a much more enjoyable experience. The cerveza was also flowing freely over lunch!!

I'm a big foodie and enjoy cooking a lot, so taking a cooking class in Oaxaca was one of the activities I wanted to do - and it was fantastic! As a group, you decide which dishes you'd cook together and afterwards you'd go to the local food market to buy a few ingredients needed. Although you didn't buy all the ingredients, our guide taught us information about different food stalls and local produce that are essential to Oaxacan cuisine. Some of us even bought a few fruits and vegetables to try on our own (would recommend tasting the sweet tomatoes - they're incredible!). Because it is a cooking class, every step was thoroughly explained which made the process long and we all were very hungry towards the end. But the wait and effort was worth it! We were also cooking outside and it was a warm day, so we were offered a few beers while cooking, which made the experience more fun.

This was a great experience. Interesting market tour with lots of info about local produce, then our class of 5 got to make choices about what to cook, then (under Oscar’s watchful tutelage) we cooked! Appetizers, soups, tortillas plain and with chopped squash blossoms, salsas and moles (2 of each), agua fresca, and dessert. Then we ate! With wine and mezcal, on the lovely terrace. Very delicious! Oscar emailed us with all the recipes so I’m ready to try them out at home.

Oscar was extraordinarily knowledgeable about Oaxacan food and cooking, and it was very impressive how he guided our oversized group through the class, even patiently taking into account participant's food allergies and and diet restrictions. Oscar calmly guided us through the preparation of an amazing array of incredible dishes and ingredients, and the payoff was a wonderful meal at the conclusion. Even though the group was large, there was time to chat with most of the other people, who represented many different countries. Oscar promptly sent us recipes by email, and we are looking forward to recreating the meals we prepared. We highly recommend this class.

Setting the menu with the group and voting was a fun way to start and break the ice. Enjoyed the trip through the market and the orientation to local ingredients for our menu. It was fun to see it all come together from the market to the table.
We had a good size group and everyone got to participate in preparing the meal. Oscar distributed the work nicely. I enjoyed making tortillas the most. Coronitas, an herbal tea, and mezcal were served during class (mainly after the knife work was done).
I wish Oscar joined us for the meal and talked more about the food and local life in Oaxaca. He just kind of disappeared to the shop upstairs once we sat down to eat and it felt a bit like the host left the party!
Overall, a fun activity in Oaxaca and good respite from all the walking we did for several days.

Chef Carrizosa’s class was a very informative and enjoyable introduction to the cuisine of Oaxaca. The tour of the market and explanations of the produce and their uses was an education by them selves. Truly a fun way of learning.

Pros - got to see another market, learned some context and basics around traditional cuisine, enjoyed connecting with the other travelers in the group, made tortillas
Cons- group too large to get through the market and also too large to be very hands on with the cooking. Could be better organized and didn’t think the ingredients were very high quality

I was a participant as well. When I was in Oaxaca last October, everyone was very compliant about mask wearing and taking temperatures before allowing entrance to a business. I hope this helps!
