We booked a foraging and cooking course in December it was a brilliant day with a hike on the beach in the sunshine. We foraged rock samphire, 3 different seaweeds and 3/4 leek leaves. On return to the kitchen as well as cooking some local fish we made a seaweed panacotta with a Japanese knotweed (yes that’s right) compote. A lovely day and Caroline is a great host

Went foraging with Caroline from Fat Hen last week. Very interesting day, will definitely be doing more foraging in the future. And the food that was served to us when we got back to the kitchen (some of which was gathered by the group) was honestly some of the best food I’ve ever eaten. I’ve been eyeing the pigeons in my garden with hungry eyes 😆. Thank you to everyone from Fat Hen.

Two events at Fat Hen: a seriously class act
A birthday weekend, my wife went on a seaweed foraging and cooking day with 9 others and we booked Fat Hen’s ‘Crab-on-the-Beach’ offer on the following day for ourselves and 4 friends. Both events were superb. Foraging and learning about lava, gutweed, sea lettuce and the like made for an enchanting morning; watching and sharing cooking and eating a seaweed based meal more than fulfilled my wife’s dreams for the day. Something of a foodie, she was hoping for some excellent knowledge - an improved understanding of seaweed. She more than received this. (That we live 2.5 hours from the nearest coast is now our only slight challenge…)
Crab-on-the-Beach took place on a September Saturday amidst non-stop sunshine. Caroline (Davey – the force behind Fat Hen) had set up a fire, tripod, wooden benches and table in a perfect spot on Sennen Beach – and brought with her a brown crab each to eat and some spider crabs to play around with. Cooked gently in an iron pot over the fire, cooled and then broken up and eaten, the eating of crab on the beach offered us one of life’s rich memories. Seaweed mayonnaise, partially foraged salad (my wife is now very excited by rock samphire) and homemade bread rolls just added to the pleasure. We can’t recommend this more warmly!

Infusion of cooking class and forage discovery - I joined a bunch of strangers, on a wet and wild November day, and loved every moment of it. I don't think I've learnt so much in a day, ate more delicious food, or felt more connected with my surroundings. Thoroughly recommend

My husband and I thoroughly enjoyed our day. ('Feast and Forage Day'). The food was DELICIOUS (plenty of it!) and the setting and ambiance relaxed and chilled. We enjoyed helping prepare our group's meal with all dishes containing locally foraged ingredients. During the day we popped out for a couple of hours to Sennen Cove to learn about foraging and to try our hands at it. Thanks for a really great day! I would recommend it to anyone!

If you are interested or care about what we are eating and where it comes from then this experience is well worth trying out. You wouldn't believe the taste and quality of ingredients that are freely available and mostly ignored. We were shown incredible seaweeds, herbs, flowers and berries which all tasted amazing and really weren't difficult to find. If you have the stomach for it then learning how to butcher a rabbit and fish filleting were also really rewarding. Everything that we collected was then prepared for the meals and these were exceptional and we clearly knew exactly where everything was sourced. Special thanks to Caroline and her amazing team of chefs and helpers

If you want to buy a gift for a foodie , this is one to buy

Met at 0930 and there were 12 of us for the day

The school is in an old barn , nicely converted

Started with a few demonstrations . Then a few hours foraging on footy paths and then the beach

Back to the school to use our ingredients and an afternoon of eating

The foraging was supplemented with some lemon sole and Pigeon breast ( both of which we were shown how to prepare )

The final meal we prepared and enjoyed as a group was of restaurant standard and as a plus was served with wine

I came away .... not necessarily converted to foraging , but with my mind opened to a new line of cooking

I ll definitely go back and try one of the other cooking days .... probably Fish and shellfish cooking

The day was run by Caroline , enthusiastic and very knowledgable , but not over the top

She was joined by a chef , who also added a different dimension

In summary .... a brilliant present and a great day

I had spotted the seaweed foraging course a while back and, as I live by the sea, thought this would be a great place to learn what to look for, what to pick and how to cook it. I was not disappointed.
The venue is not far from Penzance but is so idyllically rural as to be on another world. The outside looks a but ramshackle but once inside you are transported into a warm homely farmyard kitchen complete with every culinary tool ever needed.
The hosts, Caroline and chef Rob, went out of their way to make you feel welcome and before we knew it, the 12 of us were diving into learning how to cook seaweed crisps (something I have wanted to learn since a visit to Thailand many years ago), seaweed mayonnaise and the start of a miso soup.
Yet, we needed the weed itself so we headed for the stunning Sennan Cove - about 15mins drive away. There we spent 1 1/2hrs picking up and identifying 10 different types of edible seaweeds, learning the do's and dont's along the way. It was both beautiful and a real eye opening learning experience.
Once back we were put to work over a glass of wine, learning 6 different recipes to utilise the seaweeds we had brought back. From tepanades to lemon sole with laver bread, noodles to panacotta. And having completed the cooking bit we gorged on the fruits of the work. Delicious.
I can't recommend this highly enough. I have been on many a cheffing course and they always leave me cold, especially as I never feel that I could replicate what they were teaching. This on the other hand is a different story, and the course comes with an emailed set of recipes which I will be using from tomorrow.

I bought this as a present for my wife (who couldn’t make it), so I’ll have to book again! A lovely morning on the coast path from Treen to Porthmeor for a 2.5 hour foraging walk where we learnt lots about edible plants and flowers from Caroline. We even saw some dolphins! Then back to the Gurnard’s Head with the owner Charles to eat a brilliant 4-course meal based on the ingredients we saw and tasted in the walk. Great for presents or just a treat.

What a superb day I had with my daughter and 12 other people, foraging along the Cornish coast with Caroline, our guide from Fat hen. She is so knowledgeable and talented showing us many plants along the coastline which were edible and some to avoid. This was then followed by a cookery demonstration of which we ate a superb meal afterwards. I learnt so many new skills and how to fillet a flat fish correctly, make pasta and ravioli ( something I had never done before)
Cannot recommend this highly enough, and to say a huge thank you to Caroline, and her chef and team, but also to my daughter for such an amazing day.
