taking a week long class this spring and staying off campus (not far though, maybe a mile or two) Would you recommend taking ALL meals on campus with a meal plan? I would likely have to return for dinner.
If I brought the kids for a visit for the day, would we be able to see artists working in the studios?

YES absolutely you would be able to see the artists working in their Studios, and there are so many different types of Studios it would be quite educational for the kids to see all the different types of creative and artistic skill sets the artists are actually working on.
Make sure that you go on the days that they are in studio, usually weekends you might see if you still working in studio but Monday through Friday is best for a full-on experience. Depending on the instructor they are usually pretty great about people stepping in for a moment and looking around and sometimes might do a demo, etcetera. You just do not want to go at the end of a session when everyone is frantic to get their work finalized and produced.
There are plenty of bathrooms and facilities and also a coffee shop with snacks, delicious pastries, and cookies Etc on site. You may also opt to dine for lunch or dinner there and actually be able to sit and speak with many of the students and instructors. Check out their website or call ahead for any other questions that you may encounter and make sure you go at the right time.
