We originally booked without breakfast or dinner, but were able to change it when we checked in. How you would do so before you arrive would depend on who you booked it.
I'm trying to find a website or e-mail address for Akari No Yado Villa Revage in Nikko, but failing. Can anyone help?

I think that they have no official website or e-mail (at least I have not found any, and have spent some time on searching). If you need to contact them in advance, try to call them (the phone number should be googleable). The owner speaks good English. For booking, it is probably easiest to book via some booking site. (I think that they have their rooms spread across several sites, and not each offers all the rooms. If the standard "western" sites do not have any room, try Rakuten travel, the Japanese analogue of these booking sites.) Alternatively, if you have some concrete question, you can ask here, maybe we can help.
